Blueberry and Chocolate Chip Pancakes

As a child, I remember watching all the American films and TV programmes and often you would see a family eating thick, delicious looking pancakes for breakfast. In the UK, what we call pancakes tend to be much more like crepes and I didn't try these kind of pancakes until later in life. I've never been to the US so still have never gotten to try authentic ones, and I was actually a bit disappointed with what I did try.

Not one to be defeated, I decided to try making my own. I adapted my recipe from this one and have been hooked on them ever since! I urge you to try them; these pancakes are thick, chewy, dense and delicious.

Ingredients:

  • 1½ cups self raising flour or 1½ cups plain flour with 2 tsp baking powder
  • 1½ cups milk of choice
  • ⅓ cup natural yoghurt
  • 1 egg
  • Pinch of salt
  • Blueberries (fresh or frozen)
  • 1 tbsp dark chocolate chips

    Directions:

  • Combine all ingredients except blueberries and chocolate chips in a bowl and whisk together
  • Heat pan - you might need to add 1 tsp oil to pan to ensure pancakes don't stick
  • Drop spoonfuls of batter onto pan and sprinkle blueberries and chocolate chips over pancake
  • Cook for about 2 minutes, a good way to check if they're done on that side is air bubbles start coming up to the surface
  • Flip pancakes and cook for one minute more
  • Serve with maple syrup

    These were so good, and just what I needed this morning! This mix makes about 10 pancakes. Hopefully one day I'll get to try some authentic American pancakes - preferrably these ones!

    2. Since coming to the UK, everything else has been splendid - but the lack of American pancakes is truly sad!!! You need to go to the US and try them - SO delish!
