Baked Brown Rice

I love conquering things in the kitchen that previously been a challenge for me. I really wanted to like brown rice. And I really wanted my husband to like it too. We both have a massive sweet tooth, so I like our main meals to try and be as healthy as possible, I like to cook from scratch as much as I can and prefer wholegrains to their alternatives. But I couldn't get on board with brown rice, and we'd always eat white. Until I saw this post for perfect brown rice on Mel's Kitchen Cafe, that is. This rice is seriously amazing. I have to admit I was sceptical, but I had the remainder of a bag of brown rice in the cupboard and I couldn't resist trying it straight away. My husband and I have been eating brown rice since.

Ingredients

  • 1 and a half cups brown rice
  • 2 and a half cups water
  • Pinch of salt

    Method:

  • Rinse rice briefly in cold water
  • Put rice, water and salt into an oven proof dish with a lid
  • Cover and cook at 180°C for an hour and 10 minutes.



    Honestly, it couldn't be simpler, and I've converted my husband now too. I've put some of this rice in the freezer too once cooked, and it freezes wonderfully. Give it a try!

    1. I'm definitely going to have to give this a try! For some reason, I find brown rice to be really intimidating.
