If I ever bake something with fruit in, you can bet it's because it's looking sad in the fruit bowl. I hate wasting food (or really anything for that matter) but I'm so picky with fruit and vegetables, I only like to eat them raw when they're really crisp. Normally it's not a problem as I love my fruit and veggies so they don't normally end up sat around too long, but if they are my favourite thing to do with vegetables is to throw them into a stew and with fruit it's to bake them up somehow. These nectarines were perfect for this recipe - they were soft, sweet and so juicy. This would be a really great recipe to whip up with almost any stone fruit - nectarines, peaches, plums - and it took barely any time, so perfect for a week night!

Nectarine Cobbler

Ingredients:

  • Four very ripe nectarines
  • Tablespoon brown sugar
  • Teaspoon cornflour/cornstarch
  • 1/2 tsp vanilla extract

  • 1/3 cup caster sugar
  • 1/3 cup butter (I use Stork)
  • 2/3 cup self raising flour
  • 1 egg
  • 1 tbsp milk

  • Whipped cream or vanilla ice cream to serve (optional)

    Method:

  • Preheat oven to 180°C/356°F
  • Slice the nectarines with the skin on, discarding the stones.
  • Combine the nectarines, brown sugar, cornflour and vanilla extract in a dish. Stir well and leave to macerate while you make the topping
  • Cream the butter and sugar together
  • Mix in the flour, egg and milk. You'll be left with a thick, sticky batter which doesn't look like much but it will be plenty, trust me!
  • Pour the nectarines into an ovenproof dish (mine was about 8x8 inches) and then drop spoonfuls of the batter over the nectarines
  • Bake in a hot oven for about 10-15 minutes or until golden brown on top
  • Leave to cool slightly, and enjoy topped with whipped cream or vanilla ice cream!
