
I've always been a little bit obsessed with Mexico, and I was lucky enough to visit Playa Del Carmen in January. I fell completely in love and I'm planning on going back with my husband, mum and sisters next year and I absolutely cannot wait! In the meantime, I've been obsessed with learning Spanish, finding out more about Mexican history and culture and cooking all the things I ate whilst I was there. I found the Mexico in my Kitchen blog, and have been reading it and cooking from it since I got back. One of the first things I made was Mely's salsa, and it is amazing. I'd tried to make salsa at home with various recipes before, and I was never that impressed but this one was seriously so good and I'd urge you to try it for yourself!
Since making Mely's version, I've changed the recipe somewhat and below is my favourite way to make it!

Homemade Salsa
(Recipe adapted from Mexico in my Kitchen)
Ingredients:
200g cherry tomatoes
1 jalapeño
1 tbsp chopped white onion
½ garlic clove
1 tbsp chopped coriander
1 tbsp lime juice
Salt
