So it turns out that although I can't cook a pretty pancake, I can cook a tasty one! And I can definitely make peace with that.

With Pancake Day, or Shrove Tuesday just around the corner, I thought I'd share my recipe for making pancakes, or crepes. My mum made these, my grandma made these, they're a tried-and-true family recipe! It helps, of course, that the pancake batter itself is ridiculously easy and only requires 3 ingredients. The actual cooking of the pancake however takes a little longer to get to grips with - or at least it did with me. I've eaten many a wonky, lumpy, folded up mess. But you can rest assured in the fact that even if yours too aren't the most photogenic pancakes in the world, you can just sprinkle them with sugar and orange or lemon juice, and they'll still taste fantastic!

There's a debate in our house whether it's okay to eat pancakes as savoury items or not, and I am firmly in the "for" camp. Pancakes topped with stew or corned beef hash are just as good, or grate some cheese and sprinkle finely chopped onion or ham onto one half while still in the pan, fold, and flip. YUM.

This recipe made me six pancakes - you can easily double, or triple it if you're feeding more

Ingredients:

1 egg
300ml semi skimmed milk
125g flour

Method:

  • Weigh out flour in a mixing bowl, and give it a quick whisk (this is a handy trick when you don't have the time/inclination to seive your flour, but it achieves the same effect!)
  • Crack the egg into the bowl
  • Pour in milk
  • Whisk until you have a runny batter
  • Heat a little oil in a non stick frying pan until hot
  • I use a ladle to pour pancake batter into the pan (one not-quite-full ladle at a time), then pick the pan up by the handle and tilt the pan to spread out the batter to the edges of the pan
  • These cook quickly, particularly the 2nd, 3rd, etc pancakes so don't leave them unattended. When air bubbles start appearing on the surface of the pancake, it's usually time to flip
  • Cook on the other side, both sides should have lovely brown dots on them, then serve hot! As I briefly touched on above, the serving possibilities really are endless, these are a great base for almost anything so experiment and have fun!
